Why are berries mashed with sugar different?
According to the All Union State Standard the production of the canned berries has the most exacting requirements to the ingredients thaare used. The standard says that manufacturers can use only fresh and frozen berries, sugar, sorbic and citric acid. While making jam they can also use pectin, fructose syrup, potassium sorbate, other types of acids and water.
During the production of jam and marmalade we can follow All Union State Standard and at the same time have plenty of opportunities to test different ingredients, and it affects the taste.
We use only fresh berries and sugar, that allow to save the natural flavor.
